Preparation
- Wash the oranges thoroughly under cool water.
- Carefully peel the oranges, keeping as much of the white pith as possible.
- Slice the peels into long strips approximately 1/8th to 1/4th of an inch wide.
Cooking
- In a pot, add the orange peels and 3 cups of water. Bring to a boil for 8 to 10 minutes.
- Strain the peels and rinse under cold water to halt cooking. Repeat boiling process 2-3 times until peels are not bitter.
- Return the peels to the pot, add 1 cup of sugar and 1 cup of water. Heat until boiling, stirring until sugar dissolves.
- Reduce heat to low and let peels simmer for 45 minutes to 1 hour and 15 minutes until syrup makes peels translucent.
- Remove the candied peels and place them on a wire rack to dry for about an hour.
- Roll the tacky peels in granulated sugar and return to wire rack for an additional 4 to 6 hours.
Notes
For unique flavors, try other citrus peels. Let the boiled peels steep in sugar syrup longer for a thicker coating. To enhance sweetness, add a pinch of sea salt before rolling.
