Ingredients

For the Marinade
  • 0.25 cup soy sauce Rich, umami-packed marinade base.
  • 3 tablespoons lime juice (from 2 limes) Bright, zesty notes contrasting the beef.
  • 3 tablespoons vegetable oil Ensures marinade adherence and texture.
  • 1 tablespoon sugar Balances the saltiness of the soy sauce.
  • 1 teaspoon ground cumin Adds depth and comforting aroma.
  • 1.5 teaspoons ancho chile powder Gives a hint of spice with a smoky flavor.
  • 3 large cloves garlic (minced) Infuses flavor into the steak.
Main Ingredients
  • 2 pounds flat iron steak Tender cut ideal for marinating.

Method

Preparation
  1. In a dish, whisk together the soy sauce, lime juice, vegetable oil, sugar, ground cumin, ancho chile powder, and minced garlic to create the marinade.
  2. Poke holes in the steak using a fork. This helps the marinade penetrate effectively.
  3. Place the steak in the marinade, ensuring it's evenly coated. Cover and refrigerate for at least 4 to 8 hours.
Cooking
  1. Preheat the grill to high heat and lightly oil the grates.
  2. Grill the marinated steak for 5 to 6 minutes per side, aiming for an internal temperature of 135°F for medium-rare.
  3. Remove the steak from grill, cover with aluminum foil, and let it rest for about 5 minutes before slicing it thinly against the grain.

Notes

For best flavor, marinate steak for the full 8 hours. Avoid flipping too often for better grill marks. Resting the steak is crucial for juiciness.
