Cook the Beef Filling
  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground beef and chopped onion, cook until the beef is browned and the onion is tender, about 5-7 minutes.
  3. Stir in the minced garlic, ground cumin, chili powder, salt, and pepper, and cook for another minute.
  4. Mix in the pinto beans and cook until heated through, then remove from heat.

  2. Place a portion of the beef and bean mixture down the center and sprinkle both cheeses over it.
  3. Roll the tortilla tightly and place seam side down in the baking dish. Repeat with remaining tortillas and filling.
Add Sauce and Cheese
  1. Pour the remaining enchilada sauce evenly over the assembled enchiladas.
  2. Sprinkle any leftover cheese over the top.
Bake
  1. Place in the oven and bake for 20 to 25 minutes until cheese is melted and bubbly.
Serve
  1. Remove from oven and garnish with cilantro, tomatoes, sour cream, and black olives. Serve warm.

Notes

For an added kick, mix in some diced green chiles with the beef. You can also use rotisserie chicken for a quicker option. Letting enchiladas cool slightly before serving helps flavors meld.
