Method
Preparation
- Gather your ingredients and organize them on your counter or table.
- Line a baking sheet with wax paper.
- Chop the pecans into coarse pieces, leaving some larger bits for texture.
Caramel Mixture
- Unwrap the caramel candies and place them in a large glass bowl.
- Add the evaporated milk.
- Microwave in two-minute intervals, stirring after each session until melted.
- Avoid boiling the caramel.
- Once melted, stir in the chopped pecans thoroughly.
Forming Clusters
- Drop tablespoons of the caramel-pecan mixture onto the lined baking sheet.
- Chill in the refrigerator for 20 to 30 minutes until firm.
Chocolate Coating
- In a medium glass bowl, combine the semisweet chocolate chips and sliced white almond bark.
- Microwave in 1-2 minute intervals, stirring until melted and smooth.
- Retrieve the caramel clusters and gently flatten them.
- Using two forks, dip each cluster into the melted chocolate, ensuring they are fully coated.
- Tap the fork against the bowl to remove excess chocolate.
Finishing Touches
- Place the chocolate-covered clusters back on the wax paper.
- Lightly sprinkle Fleur de Sel on top.
- Allow to cool completely and store in an airtight container.
Notes
Chop pecans ahead for convenience. Experiment with different nuts or toppings. These clusters can be made dairy-free with appropriate substitutes.
