For the Chocolate Coating
  • 18 ounces chocolate chips (semi-sweet or milk chocolate) Use your preferred chocolate type for coating.
  • 2 teaspoons oil Use a neutral oil for melting chocolate.
For the Cherry Filling
  • 36 pieces Maraschino cherries (with stems) Ensure they are thoroughly drained.
  • 3 tablespoons butter (softened) This adds creaminess to the filling.
  • 3 tablespoons corn syrup Provides shine and moisture.
  • 2 cups powdered sugar (sifted) Sift to prevent clumping in the dough.

Method

Preparation
  1. Drain cherries and set on paper towel to dry.
  2. In a mixing bowl, combine softened butter with corn syrup until smooth.
  3. Gradually add sifted powdered sugar and mix until well combined. Chill if the dough is too soft.
  4. Take approximately a teaspoon of dough and wrap it around each cherry.
  5. Place wrapped cherries on a cookie sheet lined with wax paper and chill until firm.
Chocolate Coating
  1. In a microwave-safe bowl, melt the chocolate chips with oil in 20-second intervals, stirring after each until smooth.
  2. Dip each chilled cherry by its stem into the melted chocolate and allow excess to drip off.
  3. Place dipped cherries on wax paper-lined sheets to set.
  4. Wait until the chocolate has hardened completely before transferring.
Storage & Presentation
  1. Store completed cherries in an airtight container at room temperature for up to two weeks.
  2. Serve or package creatively for gifts.

Notes

To enhance flavors, consider adding a sprinkle of sea salt on top of the chocolate before it sets. Experiment with different chocolate types or variations with almond extract or other fruits.
