Method
Stovetop Pot Method
- In a large pot, bring 2 cups of water to a boil. Add a generous pinch of salt.
- Stir in 8 oz of penne pasta and cook according to the package instructions, approximately 10-12 minutes.
- Once the pasta is al dente, drain the excess water and set aside.
Instant Pot Method
- Add dry pasta, water, and salt to the Instant Pot, ensuring the pasta is mostly covered.
- Close the Instant Pot with the pressure valve set to Sealing. Cook on High Pressure for 4 minutes.
- For softer pasta, cook for 5 minutes.
- Let it sit for 5 minutes after cooking before performing a manual Quick Release. Drain any excess water if necessary.
Preparing the Sauce
- In a food processor, combine avocado, lemon juice, olive oil, garlic, baby spinach, green chili, and a pinch of salt and black pepper. Blend until smooth.
- Start with 1/4 cup of water and add more if necessary to reach desired sauce consistency.
- Optionally, sprinkle in parmesan cheese for added flavor.
Bringing It All Together
- Add the avocado sauce to the cooked pasta and toss until well coated.
- Serve immediately, garnished with red chili flakes and additional parmesan if desired.
Notes
Best enjoyed fresh, ideally within a few hours of preparation. For added nutrition, mix in seasonal vegetables like cherry tomatoes or roasted bell peppers.
