Method
Cooking the Chicken
- Place the chicken breasts in a pot of boiling water. Cook for about 15-20 minutes or until fully cooked. Slice or break into bite-sized pieces.
Preparing the Broccoli
- In a separate pot, bring salted water to a boil. Add frozen broccoli and cook for about 3-5 minutes until tender yet crisp.
Assembling the Casserole
- Preheat your oven to 350°F. Grease a 9 x 13 inch casserole dish and layer the cooked broccoli evenly at the bottom.
Making the Creamy Sauce
- In a saucepan over low heat, combine milk, cream cheese, garlic salt, and shredded Parmesan cheese. Stir continuously until smooth and creamy.
Combining and Layering
- Pour a cup of creamy sauce over the broccoli, then add the chicken pieces. Drizzle remaining sauce over the chicken.
Topping and Baking
- Sprinkle ¼ cup of Parmesan cheese and crushed Ritz crackers on top. Bake for 25 to 30 minutes or until golden and bubbly.
Notes
For added flavor, sauté onions or bell peppers in the saucepan before the milk mixture. Fresh broccoli can be used by blanching before layering. Customize by adding cooked pasta or rice.
