Preparation
- Rinse the purple sweet potatoes under cold water and peel them. Chop into small pieces.
Cooking
- Place the chopped sweet potatoes in a large pot, cover with cold salted water, and bring to a boil over medium heat. Reduce to a simmer and cook for about 15 minutes until fork-tender.
- Drain the potatoes in a colander and return them to the pan to let excess moisture evaporate.
Mashing
- Add the unsalted butter, salt, and pepper to the warm potatoes. Mash until creamy, being careful not to over-mash.
- Pour in the milk, starting with ¼ cup, and mix until achieving the desired creamy consistency.
Serving
- Transfer the mashed potatoes to a serving dish. For an elegant touch, top with additional butter, salt, and pepper, and parsley if desired.
- Serve hot as a side dish.
Notes
You can enhance flavor with roasted garlic or grated cheese. These mashed potatoes pair beautifully with roasted meats and vegetarian dishes. To store, let cool and place in an airtight container in the refrigerator for up to three days, or freeze for three months.
