Preparation
- Preheat the oven to 450°F (232°C).
- In a pan over medium heat, add diced yellow onion and sauté until translucent, around 3-4 minutes.
- Add minced garlic, tomato puree, vegetable broth, chili powder, cumin, paprika, nutritional yeast, and salt, sauté for an additional 2 minutes.
- Incorporate drained and rinsed black beans into the pan and stir until well combined.
- Gently mash the black beans into a thick paste and squeeze lime juice to brighten flavors.
Assembly
- Coat a baking sheet with cooking spray or olive oil. Lay out corn tortillas and scoop about 2 tablespoons of the black bean mixture onto each.
- If desired, top with vegan cheese before folding each tortilla in half.
Baking
- Bake the tacos in the oven for 5 minutes.
- Carefully flip each taco to crispen the other side for another 5 minutes.
Herb Dressing
- Blend together cilantro, garlic, salt, vegan yogurt, and lime juice in a blender until smooth.
Serving
- Once the tacos are crispy, let them cool slightly and serve warm with the herb dressing for dipping.
Notes
For extra crispiness, consider brushing tortillas with olive oil before baking. Experiment with different spices like smoked paprika or cayenne for more heat. Add sautéed peppers or corn for a unique texture.
