For the Pasta
  • 8 ounces dry fettuccine pasta The perfect noodle for soaking up that creamy sauce.
  • Chopped fresh parsley (optional, for garnish) A pop of color and freshness.

Method

Preparation
  1. Place the chicken breasts in a 6-quart crockpot and sprinkle Italian seasoning, kosher salt, and ground black pepper evenly over the chicken.
  2. Pour the heavy cream and chicken broth into the crockpot, covering the chicken completely.
  3. Scatter cubes of unsalted butter and minced garlic over the top of the chicken.
Cooking
  1. Cover the crockpot and cook on high for 2 hours, until the chicken reaches an internal temperature of 165°F.
  2. Remove the chicken, let it cool, then slice or chop into bite-sized pieces.
  3. Return chicken to the slow cooker and stir in grated Parmesan cheese until melted.
  4. Add the dry fettuccine pasta and toss well to coat with the sauce.
  5. Cook on high for an additional 20 minutes, or until the pasta is cooked al dente.
  6. Return chopped chicken to the crockpot to heat through, then let rest for a few minutes to allow the sauce to thicken.
  7. Dish out into bowls, garnishing with additional Parmesan cheese and fresh parsley if desired.

Notes

Stir the pasta occasionally during the last cooking phase to prevent clumping. Try different cheeses like mozzarella, or add spinach for extra nutrition. Store leftovers in an airtight container for up to 3 days.
