Method
Preparation
- Add a little oil to a grill pan or frying pan and preheat it over medium-high heat.
- Evenly spread the butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer the cheese and chopped tomatoes. Top with the other slice of bread, ensuring the buttered side is facing up.
Cooking the Sandwich
- Carefully place your sandwich onto the preheated pan and cook for about 2 minutes.
- Press down gently with a spatula, letting it sizzle for another 1-2 minutes until golden brown.
- Flip the sandwich and repeat the cooking process on this side, pressing down lightly to ensure even browning and that the cheese melts thoroughly.
- Transfer the sandwich to a cutting board and cut it into strips about 1/2 inch (1 cm) wide.
Cooking the Eggs
- Place the eggs in a warm bowl of water for about 10 minutes.
- Bring a pot of water to a boil, then reduce the heat to just boiling. Use a slotted spoon to gently lower the eggs into the water.
- Cook the eggs for 1 minute, then cover the pot and remove from the heat. Let them sit for 4 minutes.
- Use the slotted spoon to transfer the eggs to egg cups, tap the tops lightly with a spoon until they crack and remove the top 1/2 inch (1 cm) to reveal the warm, runny yolk.
Serving
- Serve the eggs with the grilled cheese soldiers for dipping.
Notes
For added flavor, try adding a sprinkle of herbs such as parsley or chives to egg yolks before serving. Consider a dash of hot sauce or chili flakes for heat. Leftovers can be stored in an airtight container in the fridge for up to 2 days, reheating in a toaster oven.
