Ingredients

Grilled Cheese Ingredients
  • 1 knob salted butter For spreading on bread
  • 2 slices rustic bread Ideally whole wheat sourdough, no thicker than 1/2 inch (1 cm)
  • 3 slices medium cheddar cheese Roughly broken into large pieces
  • 1/4 to 1/2 chopped tomato For a burst of juicy freshness
Egg Ingredients
  • 2 large eggs For a luscious, runny yolk
Other Ingredients
  • a little oil To grease the pan

Method

Preparation
  1. Add a little oil to a grill pan or frying pan and preheat it over medium-high heat.
  2. Evenly spread the butter on one side of each slice of bread.
  3. On the unbuttered side of one slice, layer the cheese and chopped tomatoes. Top with the other slice of bread, ensuring the buttered side is facing up.
Cooking the Sandwich
  1. Carefully place your sandwich onto the preheated pan and cook for about 2 minutes.
  2. Press down gently with a spatula, letting it sizzle for another 1-2 minutes until golden brown.
  3. Flip the sandwich and repeat the cooking process on this side, pressing down lightly to ensure even browning and that the cheese melts thoroughly.
  4. Transfer the sandwich to a cutting board and cut it into strips about 1/2 inch (1 cm) wide.
Cooking the Eggs
  1. Place the eggs in a warm bowl of water for about 10 minutes.
  2. Bring a pot of water to a boil, then reduce the heat to just boiling. Use a slotted spoon to gently lower the eggs into the water.
  3. Cook the eggs for 1 minute, then cover the pot and remove from the heat. Let them sit for 4 minutes.
  4. Use the slotted spoon to transfer the eggs to egg cups, tap the tops lightly with a spoon until they crack and remove the top 1/2 inch (1 cm) to reveal the warm, runny yolk.
Serving
  1. Serve the eggs with the grilled cheese soldiers for dipping.

Notes

For added flavor, try adding a sprinkle of herbs such as parsley or chives to egg yolks before serving. Consider a dash of hot sauce or chili flakes for heat. Leftovers can be stored in an airtight container in the fridge for up to 2 days, reheating in a toaster oven.
