Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cooked shredded chicken with ¼ cup of the enchilada sauce, as well as a generous pinch of salt and black pepper. Stir until well combined.
- For corn tortillas, wrap them in a damp paper towel and heat them in the microwave for 1 minute, flipping halfway. For flour tortillas, microwave them on a plate for the same duration.
Assembly
- Take a warmed tortilla, fill it with the chicken mixture and 1 cup of shredded cheese, roll tightly, and place seam-side down in a baking dish.
- Pour the remaining 1 ¾ cups of enchilada sauce over the assembled tortillas and sprinkle with the remaining 1 ½ cups of shredded cheese.
Cooking
- Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
- Serve immediately with optional toppings.
Notes
Customize your fillings by adding black beans, corn, or sautéed bell peppers. Prepare in advance and store in the fridge prior to baking. Add jalapeños or chili powder for heat.
