Ingredients

Coconut Mixture
  • 12 oz sweetened coconut flakes Fine, fluffy flakes offering tropical flavor and chewy texture.
  • 14 oz can of sweetened condensed milk Adds moisture and sweetness, binding the coconut flakes.
  • 1 cup powdered sugar Provides added sweetness and helps firm the mixture.
Chocolate Coating
  • 3 cups chocolate chips Choose dark, milk, or semi-sweet for coating.
  • 2 tablespoons vegetable or coconut oil Ensures smooth melting of chocolate.

Method

Make the Coconut Centers
  1. Combine sweetened coconut flakes and sweetened condensed milk in a large bowl. Stir well to coat all coconut.
  2. Add powdered sugar and mix vigorously until fully combined.
  3. Using a cookie scoop, place mounds of the coconut mixture onto wax paper. Optionally, add almonds to half of the mounds.
  4. Roll each mound into a ball using your palms and refrigerate for 30 minutes to 1 hour.
Melt the Chocolate
  1. In a medium microwave-safe bowl, combine chocolate chips and vegetable or coconut oil.
  2. Microwave in 30-second increments, stirring after each interval, until smooth and creamy.
  3. Dip each refrigerated ball into melted chocolate, ensuring it's fully covered. Lift out with a fork to remove excess chocolate.
  4. Place the chocolate-covered balls back onto wax paper and let them cool.
  5. Chill in the refrigerator for 1 hour before serving.

Notes

For added flavor, mix a pinch of sea salt into the melted chocolate. Roll finished balls in chopped nuts or additional coconut flakes for texture.
