Method
Preparation
- Wash the crabapples thoroughly, remove stems and cut off flower ends. Cut the crabapples in half, checking for any undesirable insects.
- Measure out 4 cups of trimmed and halved crabapples.
Cooking
- In a 2-quart saucepan, combine the prepared crabapples, sugar, and water, stirring gently.
- Place the saucepan over medium heat and stir occasionally until the liquid begins to simmer. Reduce heat to medium-low and let it simmer for about 5 minutes.
- Pour the mixture through a metal mesh strainer positioned over a bowl to extract the liquid.
- Press the fruit gently with a spoon to extract more liquid without pushing the pulp through the strainer.
- Pour the syrup into a clean jar and allow it to cool completely before storing in the refrigerator.
Notes
For added depth, infuse the syrup with cinnamon or cloves while cooking. Consider using other fruits or herbs for unique variations. Store for 1-2 weeks, or freeze in ice cube trays for longer preservation.
