Ingredients

For the apple filling
  • 1/3 cup Apple Cider Creates a juicy and aromatic base.
  • 2 tablespoons Granulated Sugar Enhances the apples’ natural sweetness.
  • 2 tablespoons Unsalted Butter Adds a creamy texture.
  • 1.5 teaspoons Corn Starch Thickens the filling.
  • 3/4 teaspoon Ground Cinnamon Adds warmth and comfort.
  • 1/2 teaspoon Lemon Juice Balances the sweetness.
  • 1 pinch Salt Brings out vibrant flavors.
  • 1.5 cups Gala Apples Tender and crisp, ideal for this recipe.
For the pastry
  • 1 pound Puff Pastry Choose a high-quality variety.
  • All-purpose Flour For dusting to prevent sticking.
  • Water For brushing to help seal the pastry.
  • Granulated Sugar For sprinkling on top.

Method

Preparing the filling
  1. Melt the unsalted butter in a large saucepan over medium heat.
  2. Add granulated sugar, apple cider, cornstarch, lemon juice, ground cinnamon, and a pinch of salt. Stir until sugar dissolves, about 2 to 3 minutes.
  3. Incorporate the chopped Gala apples and cook until they soften but hold their form, about 10 to 15 minutes. Remove from heat and let cool to room temperature.
Preparing the pastry
  1. Line a baking sheet with parchment paper and dust generously with flour.
  2. Roll out one piece of puff pastry into a 10-inch square and cut into four 5-inch squares. Repeat with a second piece for eight squares total.
Assembly
  1. Place a scant two tablespoons of cooled apple filling at the center of each square.
  2. Brush the edges with water, fold over to form a triangle, and crimp the edges with a fork.
  3. Transfer to the prepared sheet pan and freeze while preheating the oven.
Baking
  1. Preheat the oven to 400°F (200°C).
  2. Brush the tops lightly with water and sprinkle with granulated sugar.
  3. Stack another sheet pan underneath to prevent overbrowning and bake for 20 to 25 minutes, rotating halfway through.
  4. Once golden brown, remove from oven and transfer to a wire rack to cool slightly.
Serving
  1. Serve warm and enjoy the delightful combination of flaky pastry and spiced apple filling.

Notes

For an extra depth of flavor, consider adding nutmeg. Keep puff pastry cold for a flakier texture, and don't overfill the pastries.
