Preparation
- In a large mixing bowl, combine soy sauce, smashed garlic, chopped onion, lemon juice, 7-Up, ground black pepper, dark brown sugar, and ketchup. Whisk until smooth.
- Debone the chicken thighs and cut them into bite-sized cubes, about 2 inches.
- Place the cubed chicken in a container or ziplock bag. Pour marinade over chicken, coating well. Seal and refrigerate for at least 4 hours, preferably 24.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Grilling
- Thread marinated chicken onto soaked skewers, packing closely.
- Preheat grill to medium-high heat. Place skewers on grill and cook until seared, about 10 minutes.
- Check doneness; chicken should reach an internal temperature of 165°F. If necessary, finish cooking on indirect heat.
- Remove from grill and let rest for 5 minutes before serving.
Notes
For best flavor, marinate chicken for a full 24 hours. Fresh ingredients greatly enhance taste. Feel free to add vegetables like bell peppers or tomatoes to the skewers.
