Ingredients

For the marinade
  • 1 Cup Soy sauce Rich and savory for depth of flavor.
  • 1 Head Garlic (Peeled and smashed) Aromatics that enhance the marinade.
  • 1 small Onion Adds milder sweetness.
  • 2 Lemons Fresh juice for brightness.
  • 1/2 Cup 7-Up (soda) Helps tenderize the chicken.
  • 1 Tsp Ground black pepper Adds subtle heat.
  • 5 Tbs Dark Brown sugar Rich sweetness that balances flavors.
  • 1 Cup Ketchup Creamy addition that ties flavors together.
For the kebabs
  • 2 lbs Chicken thighs Juicy and tender, great for marinating.

Method

Preparation
  1. In a large mixing bowl, combine soy sauce, smashed garlic, chopped onion, lemon juice, 7-Up, ground black pepper, dark brown sugar, and ketchup. Whisk until smooth.
  2. Debone the chicken thighs and cut them into bite-sized cubes, about 2 inches.
  3. Place the cubed chicken in a container or ziplock bag. Pour marinade over chicken, coating well. Seal and refrigerate for at least 4 hours, preferably 24.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Grilling
  1. Thread marinated chicken onto soaked skewers, packing closely.
  2. Preheat grill to medium-high heat. Place skewers on grill and cook until seared, about 10 minutes.
  3. Check doneness; chicken should reach an internal temperature of 165°F. If necessary, finish cooking on indirect heat.
  4. Remove from grill and let rest for 5 minutes before serving.

Notes

For best flavor, marinate chicken for a full 24 hours. Fresh ingredients greatly enhance taste. Feel free to add vegetables like bell peppers or tomatoes to the skewers.
