Ingredients
Method
Preparation of Chipotle Adobo Mayo
- Add the chipotle in adobo sauce, mayonnaise, sour cream, lime juice, oregano flakes, salt, and black pepper to a small food processor. Blend until smooth and creamy.
Grilling Method
- Preheat your grill to high heat.
- Place the corn directly on the grill and cover. Grill for about 8 minutes, turning occasionally, until charred all over and cooked through.
Stovetop Method
- Fill a large pot with water and bring it to a boil. Add the corn and allow it to boil for 10 minutes.
- After boiling, drain the corn and let it rest in a colander for a few minutes to steam dry.
- In a skillet, heat 1 tbsp of olive oil over high heat. Add the corn and sear it until nicely charred all around.
Coating the Corn
- Allow the charred corn to cool slightly to make it easier to handle.
- Place the grated parmesan cheese in a shallow dish. Generously coat each ear of corn with the chipotle adobo mayo using a pastry brush.
- Roll the corn in the parmesan cheese, allowing it to stick to the mayo.
- Sprinkle a pinch of ancho chili powder or your spice of choice over the corn, then serve immediately with lime wedges on the side.
Notes
For a vegetarian option, substitute the parmesan with nutritional yeast. Extra chipotles can be added for more smoky flavor. Fresh herbs like cilantro can be included for an additional flavor boost.
