Preparation
- In a pot large enough to hold the eggs in a single layer, pour in enough water to cover them completely along with the olive oil. Bring the mixture to a gentle boil over medium heat.
- Using a spoon, gently place each egg into the boiling water, one at a time to prevent cracking.
- Set a timer and boil the eggs for 13 minutes for hard boiled eggs. For medium eggs, boil for 10 minutes, and for soft eggs, adjust to 3-6 minutes depending on desired runny yolk.
- While the eggs are boiling, prepare an ice bath in a bowl by filling it with water and adding enough ice.
- Once the timer goes off, carefully lift the eggs out of the boiling water using a slotted spoon and transfer them into the ice bath.
- Allow the eggs to chill in the ice bath for at least 10 minutes.
- To peel, do so under running cold water for the best results.
Notes
Freshness matters: Older eggs peel more easily. Adding vinegar or baking soda can help peel the eggs easier. Don’t skip the ice bath for the best texture.
