Method

Preparation
  1. In a large bowl, mash the ground beef with baking soda. Let it sit at room temperature for 20 to 25 minutes.
  2. In a small bowl, mix hoisin sauce, soy sauce, tomato paste, sesame oil, sugar, and crushed red pepper flakes. Stir well and set aside.
Cooking
  1. Heat vegetable oil in a large sauté pan over medium-high heat. When the oil shimmers, add the ground beef and break it into pieces. Brown for about 5 minutes, stirring frequently.
  2. Add chopped garlic, ginger, and light parts of scallions. Sauté until softened and fragrant.
  3. Pour in the hoisin sauce mixture, stirring to coat the beef. Cook for about a minute until the beef is cooked through.
  4. Fold in the remaining dark green parts of the scallions.
  5. Serve the beef over rice and top with sesame seeds, chopped cashews, and shredded veggies.

Notes

Consider marinating the beef in the sauce mixture for a few hours before cooking for added flavor. Customize toppings with pickled veggies or fresh herbs.
