Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, combine the lean ground beef, eggs, 2 tablespoons of coconut aminos, garlic powder, ground ginger, salt, and pepper. Mix until evenly incorporated.
  3. Roll the mixture into evenly-sized meatballs, about 1 to 1.5 inches in diameter.
Cooking Methods
  1. Choose either pan-frying and baking or baking only to cook the meatballs.
  2. For pan-frying and baking: Heat a little oil in a skillet over medium heat and sear the meatballs until browned. Then, transfer them to a baking sheet and bake for about 20 minutes.
  3. For baking only: Place the meatballs directly on a baking sheet and bake for about 20 minutes.
Making the Sauce
  1. In a large skillet, combine the coconut aminos, rice vinegar, sesame oil, minced garlic, ground ginger, honey, tapioca flour or arrowroot, and water. Heat to a simmer over medium heat.
  2. Stir constantly as it simmers until the sauce thickens.
Combine and Serve
  1. Once the meatballs are cooked, add them to the skillet with the sauce and stir gently to coat each meatball.
  2. Serve atop noodles, rice, or in lettuce wraps.

Notes

Use fresh garlic and ginger for more vibrant flavor. Do not overmix the meatball mixture to prevent toughness.
