Ingredients

Main Ingredients
  • 1.5 lb chicken thigh fillets Juicy and flavorful chicken pieces
  • 1/3 cup honey Adds irresistible sweetness
  • 2 tbsp Dijon mustard Enhances the overall flavor
  • 4 tbsp soy sauce Brings savory umami flavor
  • 2 garlic cloves, crushed Provides aromatic earthiness
  • 2-3 tbsp sriracha OR any hot sauce Adjust based on heat preference
  • 1/4 tsp salt Seasoning for the chicken
  • 1 1/2 tbsp oil Vegetable oil for cooking

Method

Preparation
  1. Cut the chicken thigh fillets into 2 cm (about 4/5 inch) cubes.
  2. In a bowl, combine honey, Dijon mustard, soy sauce, crushed garlic, sriracha, and salt. Stir until smooth.
  3. Reserve 4 tablespoons of the marinade in a small bowl for basting later.
  4. Add the cubed chicken to the remaining marinade and coat well. Set aside for at least 20 minutes, or up to overnight.
Cooking
  1. Thread the marinated chicken pieces onto skewers, using about 14 small skewers.
  2. Heat oil on a BBQ or skillet over medium heat. Cook skewers for about 2.5 minutes on one side before flipping.
  3. Baste the cooked side with the reserved marinade, then turn again and baste the opposite side. Cook for a few more seconds.
  4. Transfer skewers to a plate and baste one final time with the reserved marinade before serving.

Notes

For best flavor, marinate chicken for several hours or overnight. Use a grill pan if no BBQ is available. Variations include trying different hot sauces or substituting chicken with shrimp or tofu.
