Method
Preparation
- Cut the chicken thigh fillets into 2 cm (about 4/5 inch) cubes.
- In a bowl, combine honey, Dijon mustard, soy sauce, crushed garlic, sriracha, and salt. Stir until smooth.
- Reserve 4 tablespoons of the marinade in a small bowl for basting later.
- Add the cubed chicken to the remaining marinade and coat well. Set aside for at least 20 minutes, or up to overnight.
Cooking
- Thread the marinated chicken pieces onto skewers, using about 14 small skewers.
- Heat oil on a BBQ or skillet over medium heat. Cook skewers for about 2.5 minutes on one side before flipping.
- Baste the cooked side with the reserved marinade, then turn again and baste the opposite side. Cook for a few more seconds.
- Transfer skewers to a plate and baste one final time with the reserved marinade before serving.
Notes
For best flavor, marinate chicken for several hours or overnight. Use a grill pan if no BBQ is available. Variations include trying different hot sauces or substituting chicken with shrimp or tofu.
