Ingredients

For the Marinade
  • 1 tbsp soy sauce Adds savory umami flavor
  • 3 tbsp mirin Sweet rice wine that brightens the flavor
  • 1 tbsp sake Adds complexity (optional)
For the Salmon
  • 2 pieces salmon fillets (5 oz / 150 g each) Juicy and tender for flavor
  • 1/2 tbsp oil For cooking to achieve crispy skin

Method

Marination
  1. Combine the soy sauce, mirin, and sake in a ziplock bag. Add the salmon fillets, ensuring they're well-coated. Remove air, seal the bag, and marinate overnight or for at least three hours.
Cooking
  1. Heat 1/2 tablespoon of oil in a non-stick pan over medium heat.
  2. Place the salmon fillets skin-side down in the pan. Cook for about 2 to 3 minutes or until the skin is crispy and golden.
  3. Drizzle the remaining marinade over the flesh side of the salmon. Flip the fillets and cook for an additional 2 minutes or until they reach desired doneness.
Resting and Serving
  1. Let the salmon rest for a couple of minutes before serving warm, garnished as desired.

Notes

For best results, use high-quality salmon. A short marination of 30 minutes works too. Monitor heat carefully to avoid burning the skin.
