Preparation
- Heat the garlic-infused oil in a large skillet over medium-high heat.
- Add the ground beef and cook for about 5 to 7 minutes, breaking it into smaller pieces.
- Stir in the low FODMAP taco seasoning, followed by tomato paste and water.
- Let this mixture come to a gentle boil for about 5 to 6 minutes, then remove from heat.
Frying Tortillas
- Line a baking sheet with paper towels.
- In a skillet over medium heat, pour in the light cooking oil and heat it to about 350°F.
- Carefully place a tortilla in the hot oil for 12-15 seconds until golden brown on one side.
- Flip the tortilla, folding it in half while frying for another 10-12 seconds per side, then transfer to the baking sheet.
- While hot, sprinkle with kosher salt and let excess oil drain.
- Repeat for the remaining tortillas.
Assembly
- Fill each taco shell with the beef mixture.
- Top with lactose-free sour cream, cheddar cheese, cilantro, lime juice, and green onion.
Notes
Customize your spice level with jalapeños or hot sauce. Meal prep the beef filling in advance for quick tacos. For variety, try different fillings or toppings.
