Ingredients

Main Ingredients
  • 1/3 cup Worcestershire sauce Adds savory depth
  • 1/3 cup apple cider vinegar Provides tanginess
  • 1/3 cup white vinegar Balances sweetness
  • ½ tablespoon granulated garlic Adds aroma
  • ½ teaspoon ground cumin Adds warmth
  • 1 tablespoon coarse black pepper Provides gentle kick
  • ½ cup brown sugar For sweetness
  • ¼ cup maple syrup Star ingredient
  • ¾ cup yellow mustard For creamy undertone
  • ¼ cup chopped chipotles in adobo For smoky heat
  • 1 cup canola oil For emulsifying

Method

Preparation
  1. In a medium saucepan, add all the ingredients except for the mustard, chipotles, and canola oil.
  2. Heat the saucepan over medium heat and gently warm the contents for about 5 minutes until the liquid starts to simmer and the sugars dissolve completely.
  3. Pour the warm mixture into a blender. Add the yellow mustard and chopped chipotle peppers and blend everything together until smooth.
  4. While the blender is running, slowly drizzle in the canola oil through the lid to emulsify the sauce.
  5. If there are any air bubbles in the sauce, return it to the saucepan on low heat to eliminate them.
  6. Transfer the sauce to an airtight container and store in the refrigerator for 2-3 weeks.

Notes

Adjust heat level by reducing chipotles or removing seeds. Experiment with sweetness using honey. Double the batch for barbecues.
