Preparation
- In a 2-quart saucepan, combine the sugar, brown sugar, and maple syrup. Over medium heat, stir the mixture often using a whisk. Cook for about 10 minutes until the mixture thickens and becomes syrupy.
- Once thick, add the non-hydrogenated margarine and stir until it melts completely. Pour the mixture into a mixing bowl while working quickly.
- In a blender, crumble the extra firm silken tofu and add the non-dairy milk, cornstarch, and salt. Blend until smooth, ensuring all ingredients are well incorporated.
- Preheat the oven to 350°F (175°C).
- Add the blended tofu mixture and vanilla extract to the warm caramel. Mix well and gently fold in the pecan halves.
- Pour the filling into the prepared pie crust. Bake for about 40 minutes, until the pie jiggles slightly in the center.
- Allow the pie to cool for a few hours before slicing.
Notes
Allow flavors to enhance during cooling. For best serving, enjoy at room temperature or slightly warmed. A scoop of dairy-free vanilla ice cream is an excellent pair.
