Preparation
- If you’re using fresh chicken, slice the breasts in half and marinate them with the lemon juice, olive oil, garlic powder, Italian seasoning, salt, and smoked paprika in a large bowl. Allow the chicken to marinate for at least 20 minutes for the best flavor.
Cooking
- Heat 1 teaspoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 8-10 minutes on each side, flipping periodically. Ensure the chicken reaches an internal temperature of 165ºF for safe consumption.
- Once the chicken is thoroughly cooked, transfer it to a plate. In the same skillet (or a fresh one, if you prefer), add the bell peppers and onions. Sauté with 1 teaspoon of olive oil for about 5 minutes until they are softened and slightly caramelized. Season lightly with salt.
Assembly
- It’s time to assemble the wraps! If desired, toast your tortillas on the stove for 45 seconds to enhance their flavor and texture.
- Spread a generous layer of hummus on each tortilla, then layer on the chicken, sautéed vegetables, cucumber, tomatoes, romaine, feta cheese, and olives.
- To wrap them up, fold the bottom up halfway, then fold in the sides and secure with a toothpick to keep everything in place.
Serving
- Serve your Mediterranean Wraps with sriracha for a spicy kick and extra hummus on the side for dipping. Enjoy!
Notes
For added flavor, consider grilling the chicken instead of pan-searing for that chargrilled taste. Experiment with different vegetables or add roasted red peppers for an extra pop of flavor. If available, include fresh herbs like parsley or mint for a refreshing finish.
