  • ¼ cup olives Brings a briny depth that enhances the dish.
  • 1 bell pepper sliced bell pepper Sweet and colorful, they add warmth and texture.
  • ½ red onion sliced red onion Adds a savory sweetness when cooked down.

Method

Preparation
  1. If you’re using fresh chicken, slice the breasts in half and marinate them with the lemon juice, olive oil, garlic powder, Italian seasoning, salt, and smoked paprika in a large bowl. Allow the chicken to marinate for at least 20 minutes for the best flavor.
Cooking
  1. Heat 1 teaspoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 8-10 minutes on each side, flipping periodically. Ensure the chicken reaches an internal temperature of 165ºF for safe consumption.
  2. Once the chicken is thoroughly cooked, transfer it to a plate. In the same skillet (or a fresh one, if you prefer), add the bell peppers and onions. Sauté with 1 teaspoon of olive oil for about 5 minutes until they are softened and slightly caramelized. Season lightly with salt.
Assembly
  1. It’s time to assemble the wraps! If desired, toast your tortillas on the stove for 45 seconds to enhance their flavor and texture.
  2. Spread a generous layer of hummus on each tortilla, then layer on the chicken, sautéed vegetables, cucumber, tomatoes, romaine, feta cheese, and olives.
  3. To wrap them up, fold the bottom up halfway, then fold in the sides and secure with a toothpick to keep everything in place.
Serving
  1. Serve your Mediterranean Wraps with sriracha for a spicy kick and extra hummus on the side for dipping. Enjoy!

Notes

For added flavor, consider grilling the chicken instead of pan-searing for that chargrilled taste. Experiment with different vegetables or add roasted red peppers for an extra pop of flavor. If available, include fresh herbs like parsley or mint for a refreshing finish.
