Ingredients

Crust
  • 1 1/4 cups graham cracker crumbs Crushed to a delightful powder for a buttery, crispy texture.
  • 6 tablespoons unsalted butter, melted Adds richness and binds the crumbs together.
Filling
  • 1 package (8 oz) cream cheese, softened Forms the heart of the dessert, providing a luscious mouthfeel.
  • 1/2 cup confectioners' sugar Sweetens the cream cheese filling.
  • 1/4 teaspoon almond extract Enhances sweetness with a warm, nutty aroma.
  • 2 cups whipping cream Whipped to perfection for airy layers.
  • 1/2 teaspoon vanilla extract A classic flavor that complements the cherries.
  • 3 tablespoons granulated sugar Balances the tartness in the cherry topping.
  • 1 can (21 oz) cherry pie filling Adds a vibrant burst of color and flavor.

Method

Preparation
  1. In a large mixing bowl, combine the graham cracker crumbs and melted butter. Use a fork to blend until all crumbs are moistened.
  2. Reserve 2 tablespoons of the crumb mixture for later topping.
  3. Firmly press the remaining crumb mixture into the bottom of a 9x9-inch pan sprayed with non-stick cooking spray.
  4. In another bowl, cream together softened cream cheese, confectioners' sugar, and almond extract using an electric mixer until completely smooth.
  5. In a separate bowl, whip whipping cream, granulated sugar, and vanilla extract until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until well combined.
  7. Spread a little less than half of the mixture evenly over the graham cracker crust.
  8. Drop cherry pie filling by spoonfuls on top of the cream cheese layer. Gently spread to cover evenly.
  9. Pour the remaining mixture over the cherry layer, smoothing to cover cherries completely.
  10. Sprinkle reserved crumbs over the top as a finishing touch.
  11. Cover the pan and refrigerate for several hours or overnight to allow it to set.

Notes

For a richer crust, consider increasing the amount of melted butter. Feel free to double the cherry pie filling for a fruitier layer. Adding chopped nuts can give an added crunch and flavor.
