Preparation
- In a large mixing bowl, combine the graham cracker crumbs and melted butter. Use a fork to blend until all crumbs are moistened.
- Reserve 2 tablespoons of the crumb mixture for later topping.
- Firmly press the remaining crumb mixture into the bottom of a 9x9-inch pan sprayed with non-stick cooking spray.
- In another bowl, cream together softened cream cheese, confectioners' sugar, and almond extract using an electric mixer until completely smooth.
- In a separate bowl, whip whipping cream, granulated sugar, and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Spread a little less than half of the mixture evenly over the graham cracker crust.
- Drop cherry pie filling by spoonfuls on top of the cream cheese layer. Gently spread to cover evenly.
- Pour the remaining mixture over the cherry layer, smoothing to cover cherries completely.
- Sprinkle reserved crumbs over the top as a finishing touch.
- Cover the pan and refrigerate for several hours or overnight to allow it to set.
Notes
For a richer crust, consider increasing the amount of melted butter. Feel free to double the cherry pie filling for a fruitier layer. Adding chopped nuts can give an added crunch and flavor.
