Preparation
- Start by lining a 9×9 square dish with parchment paper, allowing some paper to hang over the edges.
- In a food processor, combine almond flour, walnuts, cocoa powder, vanilla extract, and salt. Blend until flour-like.
- Add the pitted medjool dates and blend until a sticky dough forms.
- Transfer brownie dough into the dish and press down to create an even layer.
Ganache Preparation
- In a separate bowl, mix chocolate chips, maple syrup, and vanilla extract. Set aside.
- Scoop coconut cream into another bowl, microwave for 1 minute 45 seconds, and whisk until smooth.
- Combine 2/3 cup of this mixture with chocolate chips, let sit for 1-2 minutes before whisking.
- If needed, microwave for another 15-30 seconds to fully melt chocolate chips.
Assembly and Chilling
- Pour ganache over the brownie layer and smooth it out with a spatula.
- Sprinkle rainbow candy-coated chips on top.
- Chill in the refrigerator for 4 hours or until the ganache has set.
Serving
- Once set, lift brownies from dish using parchment and slice into 16 squares.
- Enjoy your delightful creation!
Notes
Ensure your medjool dates are fresh for easy blending. For a richer chocolate flavor, use dark chocolate chips.
