Ingredients

Main Ingredients
  • 2 cups sugar Base ingredient for sweetness.
  • 1 heaping tablespoon cocoa Provides rich chocolate flavor.
  • 1 tablespoon corn syrup Helps achieve creamy consistency.
  • 1/2 teaspoon salt Balances sweetness and flavors.
  • 1 cup whole milk Adds creamy texture.
  • 1 tablespoon butter Provides smoothness to the fudge.
  • 1 teaspoon vanilla Adds a lovely aromatic note.
  • 1 cup toasted pecan halves or pieces Adds crunch and nutty flavor; can substitute or omit.

Method

Preparation
  1. Line an 8"x8" pan with parchment paper or non-stick foil, extending it over two sides for handles. Lightly spray or butter it.
  2. Combine sugar, cocoa powder, corn syrup, salt, and whole milk in a large, heavy-bottomed saucepan.
Cooking
  1. Cook over medium heat, stirring occasionally until the mixture begins to boil.
  2. Allow the fudge to boil until it reaches a temperature of 234°F.
  3. Remove from heat and add butter and vanilla, letting it sit until it cools to 110°F.
  4. Stir vigorously with a wooden spoon until it loses its shine and starts to thicken.
  5. Quickly toss in pecans and stir to combine.
  6. Pour the thickened fudge into the prepared pan and smooth it into corners.
Setting
  1. Allow the fudge to set at room temperature for at least an hour before slicing.

Notes

For best results, use a candy thermometer. Ensure the fudge cools adequately before stirring in butter and vanilla. Customize by adding different nuts or spices.
