Preparation
- Line an 8"x8" pan with parchment paper or non-stick foil, extending it over two sides for handles. Lightly spray or butter it.
- Combine sugar, cocoa powder, corn syrup, salt, and whole milk in a large, heavy-bottomed saucepan.
Cooking
- Cook over medium heat, stirring occasionally until the mixture begins to boil.
- Allow the fudge to boil until it reaches a temperature of 234°F.
- Remove from heat and add butter and vanilla, letting it sit until it cools to 110°F.
- Stir vigorously with a wooden spoon until it loses its shine and starts to thicken.
- Quickly toss in pecans and stir to combine.
- Pour the thickened fudge into the prepared pan and smooth it into corners.
Setting
- Allow the fudge to set at room temperature for at least an hour before slicing.
Notes
For best results, use a candy thermometer. Ensure the fudge cools adequately before stirring in butter and vanilla. Customize by adding different nuts or spices.
