Method
Preparation
- Preheat the oven to 300 degrees F.
- Grease a 9-inch springform pan and line with parchment paper, or use two loaf pans.
- Mash the peaches, ensuring they remain slightly chunky.
Mixing
- In a separate bowl, mix flour, baking powder, salt, and coconut.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Gradually fold in the flour mixture and mashed peaches alternately.
- Fold in the dried and/or candied fruit.
Baking
- Pour the batter into prepared pan(s) and smooth the top.
- Bake for approximately 2½ hours or until a toothpick comes out clean.
- Cool on a wire rack for 15-20 minutes before removing from the pan and cooling completely.
Flavor Infusion
- Optional: Poke holes in the cake and pour brandy or whiskey over, flipping to soak the bottom.
- Consider wrapping in cheesecloth soaked in alcohol for added flavor.
Garnishing
- Decorate with marzipan, fruit, nuts, or glaze for a shiny finish.
Notes
For best texture, ensure all ingredients are at room temperature. Letting the cake sit for a day enhances its flavor. Adjust sugar and fruit types according to taste.
