Method

Combine the Marinade
  1. In a mixing bowl, whisk together all the marinade ingredients: coconut milk, pineapple juice, brown sugar, tomato sauce, soy sauce, lime zest and juice, garlic, onion powder, cumin, paprika, ginger, cayenne pepper (if using), and salt.
Reserve Marinade
  1. Pour 1/2 cup of the marinade into a separate bowl, cover, and refrigerate it for later use (this will be your basting marinade).
Marinate the Chicken
  1. Add the cut chicken pieces to the mixing bowl with the remaining marinade. Toss to ensure every piece is well-coated. Cover and marinate in the fridge for at least 3 hours.
Prepare the Skewers
  1. After marination, drain and discard the excess marinade from the chicken. Thread the marinated chicken pieces onto the soaked skewers.
Cooking
  1. Heat oil in a large skillet or BBQ over medium-high heat. Cook the skewers, turning frequently to ensure all sides are golden-brown. Baste generously with the reserved marinade.
Serve
  1. Remove the skewers from heat and let them rest for a few minutes. Serve hot alongside creamy Coconut Lime Rice or as desired.

Notes

Consider adding chopped fresh cilantro or green onions as a garnish. For smokiness, add liquid smoke to the marinade. You can thread bell peppers or pineapple chunks onto the skewers for added flavor.
