Ingredients

For the marinade
  • 1 can chipotle peppers in adobo sauce (7 oz can) Infuses chicken with smoky flavor.
  • 4 tbsp fresh lime juice Brightens the overall flavor.
  • 4 tbsp fresh orange juice Adds a sweet citrus note.
  • 6 cloves garlic Essential for building flavor.
  • 1 medium onion (quartered) Provides sweetness when caramelized.
  • 1 tsp cumin Adds depth and warmth.
  • 1 tbsp dried oregano Pairs well with chicken.
  • 1 tsp ground coriander Optional but recommended.
  • 1 tsp smoked paprika Enhances the smoky profile.
  • 1 tsp salt Essential for flavor.
  • 1/2 tsp pepper Rounding out the seasoning.
For the chicken
  • 3 pounds boneless skinless chicken thighs Juicy option, can also use chicken breasts.
  • 2 tsp olive oil Adds depth to the dish.
  • 4-5 tbsp water For steam while cooking.
  • 1/2 cup fresh cilantro Adds freshness and earthiness.

Method

Preparation
  1. Add all marinade ingredients to a blender or bowl and purée until smooth.
  2. Place chicken in an airtight container or Ziploc bag, pour over marinade, and mix thoroughly. Refrigerate for at least 15-30 minutes, or up to 24 hours.
Cooking
  1. Preheat the grill to high heat, about 350°F-400°F, and brush grates with olive oil.
  2. Grill the marinated chicken for 15-30 minutes, turning occasionally until internal temperature reaches 165°F.
  3. Optionally, heat a skillet over medium-high and add olive oil and chicken with leftover marinade. Cook for about 5 minutes, flip and cook for 3-5 minutes more.
  4. Alternatively, for an air fryer method, coat basket with olive oil, place marinated chicken, and cook at 400°F for 8 minutes. Flip and cook for an additional 6-7 minutes.
  5. Drizzle the cooked chicken with the remaining sauce from the pan before serving.

Notes

Marinade longer for better flavor; fresh ingredients enhance dish. Allow chicken to rest briefly after cooking to retain juices.
