Preparation
- Add all marinade ingredients to a blender or bowl and purée until smooth.
- Place chicken in an airtight container or Ziploc bag, pour over marinade, and mix thoroughly. Refrigerate for at least 15-30 minutes, or up to 24 hours.
Cooking
- Preheat the grill to high heat, about 350°F-400°F, and brush grates with olive oil.
- Grill the marinated chicken for 15-30 minutes, turning occasionally until internal temperature reaches 165°F.
- Optionally, heat a skillet over medium-high and add olive oil and chicken with leftover marinade. Cook for about 5 minutes, flip and cook for 3-5 minutes more.
- Alternatively, for an air fryer method, coat basket with olive oil, place marinated chicken, and cook at 400°F for 8 minutes. Flip and cook for an additional 6-7 minutes.
- Drizzle the cooked chicken with the remaining sauce from the pan before serving.
Notes
Marinade longer for better flavor; fresh ingredients enhance dish. Allow chicken to rest briefly after cooking to retain juices.
