Ingredients

For the ganache
  • 8 ounces white chocolate, chopped This creamy, sweet chocolate forms the basis of our truffles, offering a smooth texture.
  • 2 tablespoons heavy cream Adds richness and helps achieve that delightful, gooey consistency.
  • 1 tablespoon pumpkin puree Provides a velvety mouthfeel and authentic pumpkin flavor.
  • ¼ teaspoon pumpkin pie spice An aromatic blend of spices that infuses each bite with comforting notes.
For the coating
  • 4 ounces semi-sweet chocolate, chopped The decadent chocolate coating that brings together all the flavors.

Method

Preparation
  1. Chop the white chocolate into small pieces and place in a heat-safe bowl.
  2. In a small saucepan, gently heat the heavy cream over medium heat until it starts to simmer, then remove from heat.
  3. Stir in the pumpkin puree and pumpkin pie spice into the hot cream until fully combined.
Combining and Chilling
  1. Pour the hot cream mixture over the chopped white chocolate and let sit for 2-3 minutes to soften.
  2. Stir until smooth; if needed, use the microwave in short intervals to melt any unmelted bits.
  3. Cover the bowl and refrigerate for at least 2 hours, or overnight to solidify.
Forming the Truffles
  1. Once firm, let the ganache warm slightly for about 5 minutes. Scoop out portions and roll them into 1-inch balls.
  2. Place the truffles on a cookie sheet lined with wax or parchment paper.
  3. Refrigerate the sheet for another 20-30 minutes.
Coating the Truffles
  1. Melt the semi-sweet chocolate in a heat-safe bowl, using the microwave in 30-second increments.
  2. Dip each truffle into the melted chocolate, and tap off excess before returning to the lined sheet.
  3. Once coated, place the truffles back in the fridge for another 20 minutes to allow the chocolate to set.
  4. Optional: Drizzle any leftover melted chocolate over the set truffles for extra elegance.
Serving
  1. Keep the truffles in the refrigerator until ready to serve.

Notes

Use good quality chocolate for best taste. Consider adding a pinch of cinnamon and nutmeg to elevate the flavors. These truffles can be made up to two days in advance.
