Ingredients
Method
Preparation
- Chop the white chocolate into small pieces and place in a heat-safe bowl.
- In a small saucepan, gently heat the heavy cream over medium heat until it starts to simmer, then remove from heat.
- Stir in the pumpkin puree and pumpkin pie spice into the hot cream until fully combined.
Combining and Chilling
- Pour the hot cream mixture over the chopped white chocolate and let sit for 2-3 minutes to soften.
- Stir until smooth; if needed, use the microwave in short intervals to melt any unmelted bits.
- Cover the bowl and refrigerate for at least 2 hours, or overnight to solidify.
Forming the Truffles
- Once firm, let the ganache warm slightly for about 5 minutes. Scoop out portions and roll them into 1-inch balls.
- Place the truffles on a cookie sheet lined with wax or parchment paper.
- Refrigerate the sheet for another 20-30 minutes.
Coating the Truffles
- Melt the semi-sweet chocolate in a heat-safe bowl, using the microwave in 30-second increments.
- Dip each truffle into the melted chocolate, and tap off excess before returning to the lined sheet.
- Once coated, place the truffles back in the fridge for another 20 minutes to allow the chocolate to set.
- Optional: Drizzle any leftover melted chocolate over the set truffles for extra elegance.
Serving
- Keep the truffles in the refrigerator until ready to serve.
Notes
Use good quality chocolate for best taste. Consider adding a pinch of cinnamon and nutmeg to elevate the flavors. These truffles can be made up to two days in advance.
