Preparation
- Preheat your oven to 350ºF (180°C) and grease a bundt pan with 1 or 2 tablespoons of soft shortening or margarine.
- Flour the greased pan and set aside.
- If using fresh raspberries, set aside 2 tablespoons of flour to coat them.
Mixing Ingredients
- Sift together the remaining flour, baking powder, and salt in a bowl.
- In a large mixing bowl, beat the butter until creamy, then gradually add sugar and beat until light and fluffy.
- Add eggs one at a time, mixing after each addition.
- Gradually incorporate dry ingredients with buttermilk and vanilla in alternating parts.
- Fold in the raspberries, lemon zest (if using), and finely chopped white chocolate gently.
Baking
- Pour the batter into the prepared bundt pan and spread evenly.
- Bake for 45-50 minutes, or until a tester comes out clean.
- Cool the cake on a wire rack for 10 minutes before inverting onto the rack.
Making Ganache
- Chop the reserved white chocolate into fine pieces.
- Heat the cream until just boiling, then pour over the chocolate and let sit.
- Whisk until smooth; microwave in bursts if needed.
Decorating
- Drizzle ganache over the cooled bundt cake and top with raspberries.
- Serve immediately for optimal freshness.
Notes
For a richer flavor, use high-quality white chocolate. Ensure butter and eggs are at room temperature for the best results.
