Method

Preparation of Crust
  1. Process the crust ingredients – pecans, one soft medjool date, maple syrup, and coconut oil – in a food processor until you achieve a sticky, crumbly texture.
  2. Transfer the mixture to a 5-inch springform pan and press down firmly to form an even crust. Freeze the base while working on the filling.
Making the Filling
  1. Ensure all filling ingredients are at room temperature. Combine raw cashews, maple syrup, cacao powder, almond milk, and coconut oil in a high-powered blender.
  2. Blend until smooth and uniform in consistency.
  3. Pour the filling over the prepared crust and spread evenly. Return to the freezer for about 30 minutes to an hour.
Preparing the Caramel Sauce
  1. Blend the second half of soft medjool dates, maple syrup, almond milk, coconut oil, and optional carob powder until totally smooth.
  2. Spoon this caramel mixture over the cheesecake layer, smoothing it out gently with a spatula.
  3. Sprinkle crushed pecans and chocolate chunks on top.
Freezing and Serving
  1. Freeze the entire cake for 5 to 6 hours or overnight for best texture.
  2. Let it thaw for a few minutes before slicing and serving.

Notes

Soak cashews for at least 4 hours before use for a smooth filling. Adjust maple syrup in caramel layer for sweetness preference. Extra cacao powder can be added for a richer filling.
