Method
Preparation of Crust
- Process the crust ingredients – pecans, one soft medjool date, maple syrup, and coconut oil – in a food processor until you achieve a sticky, crumbly texture.
- Transfer the mixture to a 5-inch springform pan and press down firmly to form an even crust. Freeze the base while working on the filling.
Making the Filling
- Ensure all filling ingredients are at room temperature. Combine raw cashews, maple syrup, cacao powder, almond milk, and coconut oil in a high-powered blender.
- Blend until smooth and uniform in consistency.
- Pour the filling over the prepared crust and spread evenly. Return to the freezer for about 30 minutes to an hour.
Preparing the Caramel Sauce
- Blend the second half of soft medjool dates, maple syrup, almond milk, coconut oil, and optional carob powder until totally smooth.
- Spoon this caramel mixture over the cheesecake layer, smoothing it out gently with a spatula.
- Sprinkle crushed pecans and chocolate chunks on top.
Freezing and Serving
- Freeze the entire cake for 5 to 6 hours or overnight for best texture.
- Let it thaw for a few minutes before slicing and serving.
Notes
Soak cashews for at least 4 hours before use for a smooth filling. Adjust maple syrup in caramel layer for sweetness preference. Extra cacao powder can be added for a richer filling.
