Ingredients

Main Ingredients
  • 1/2 cup butter (softened to a velvety, creamy consistency)
  • 1 cup granulated sugar (sweet and fluffy)
  • 1 cup ricotta cheese (smooth and delightful)
  • 1 teaspoon vanilla extract (aromatic and fragrant)
  • 1 large egg (rich and binding)
  • 2 cups all-purpose flour (fine and soft)
  • 1 tablespoon baking powder (light and airy)
  • 1/2 teaspoon salt (enhancing flavor)
Icing
  • 1 1/2 cups powdered sugar (sweet and smooth)
  • 3 tablespoons milk (creamy and luscious)
  • Red & green sugar crystals (a festive touch)

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, ricotta cheese, and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms.
  6. Cover the bowl and chill the dough in the refrigerator for at least two hours.
Baking
  1. Once chilled, drop rounded tablespoons of dough onto the prepared baking sheets, spaced about two inches apart.
  2. Bake in the preheated oven for about 15 minutes, or until lightly golden on the edges.
  3. Remove from the oven and transfer to a wire cooling rack to cool completely.
Icing
  1. In a small bowl, whisk together the powdered sugar and milk until smooth.
  2. Dip the top of each cooled cookie into the icing and sprinkle with festive red and green sugar crystals.

Notes

For perfectly soft and chewy cookies, avoid overmixing the dough and chill it adequately before baking. Consider adding flavored extracts or chocolate chips for variations.
