Preparation
- Preheat the oven to 400°F (204°C).
- Whisk together tahini, coconut aminos, maple syrup, garlic powder, and salt in a bowl. Add water to achieve desired consistency. Set aside.
- Rinse the cabbage under cold water, slice it into four quarters, then cut each quarter into smaller wedges. Place them on a baking sheet.
Cooking
- Mix coconut aminos, sesame oil, and spices in a bowl. Brush over each cabbage wedge, ensuring they're well-coated.
- Bake for 20 minutes. Brush prepared maple tahini sauce over each wedge and bake for another 10 minutes until crispy and golden.
Serving
- Transfer roasted cabbage to a serving plate. Top with remaining maple tahini sauce, sprinkle with pistachios, sesame seeds, and parsley.
Notes
For the best roasting, ensure cabbage wedges are evenly spaced on the baking sheet. Pair with grains like quinoa or farro for a complete meal. Experiment with different nuts or seeds.
