Preparation
- Preheat your oven to 400°F (200°C) and line a half baking sheet with parchment paper.
- In a small bowl, whisk together the maple syrup and ground cinnamon until well combined. If your peaches are large, cut each one into 12 wedges.
Roasting the Peaches
- Arrange the peach wedges on the prepared baking sheet and drizzle the maple syrup and cinnamon mixture over them.
- Roast in the oven for 15-20 minutes, stirring every 5 minutes until the syrup is bubbling and the peaches are tender.
- Transfer to a plate and scrape the syrup over the peaches.
Making the Ricotta Spread
- Combine the ricotta, honey, and lemon juice in a food processor.
- Slowly pour in the heavy cream and process for another 20 seconds until smooth and thick.
Assembling the Tartine
- Slice the sourdough into 5 pieces, about 3/4 to 1 inch thick, and toast until golden brown.
- Spread 1/4 to 1/3 cup of the whipped ricotta on each toasted slice.
- Layer 4 to 6 peach wedges on each slice and drizzle reserved maple syrup from roasting over the top.
Finishing Touches
- Sprinkle the chopped cashews and basil over each tartine.
- Serve immediately as an appetizer or dessert.
Notes
For extra flavor, consider grilling the peaches instead of roasting. For quick preparation, pre-whipped ricotta can be found in stores. You can also experiment with toppings like chili flakes or fresh berries.
