  • 1/2 cup onion (finely diced) Adds a burst of flavor and crunch, distributing their sweetness.
  • 2 cups cheddar cheese (shredded, divided) Melts beautifully to create a gooey, cheesy topping.

Method

Preparation
  1. Start by greasing the bottom of your slow cooker with cooking spray.
  2. In a large bowl, mix together the frozen diced potatoes, cream of chicken soup, sour cream, garlic salt, finely diced onion, and 1 cup of the shredded cheddar cheese. Stir until well combined.
Cooking
  1. Pour the mixture into the greased slow cooker, cover with the lid, and cook on HIGH for 3-4 hours or on LOW for 5-6 hours.
  2. Mix halfway through the cooking process to ensure even cooking.
Finishing Touches
  1. Once the potatoes are tender, turn off the slow cooker and remove the lid.
  2. Sprinkle the remaining 1 cup of cheddar cheese over the top of the potatoes and cover again for an additional 5-10 minutes until the cheese melts.

Notes

For a different flavor profile, try incorporating a blend of cheeses like Monterey Jack or pepper jack. Substitute sour cream with Greek yogurt for a lighter option. Add favorite herbs such as thyme or parsley to elevate flavor.
