  • ½ tablespoon ground cumin with its unique earthiness
  • 1 teaspoon paprika adding a hint of sweetness and vibrant color
  • 1 teaspoon sea salt enhancing the natural flavors
  • ½ teaspoon garlic powder delivering a savory punch
  • ½ teaspoon onion powder for depth and sweetness
  • ¼ teaspoon crushed red chili flakes introducing a hint of heat
  • ¼ teaspoon dried oregano for a touch of herbal freshness
  • ¼ teaspoon ground black pepper adding warmth and complexity
For the beef and assembly
  • 1 kg chuck beef roast yielding tender, juicy shreds
  • ¼ cup water providing moisture while cooking
  • 12 pieces corn tortillas offering a crispy, hearty base
  • 1 or 2 pieces ripe avocados creamy and buttery for topping
  • Juice of 1 lime adding a refreshing zing
  • ¼ cup dairy-free plain yogurt for some tangy creaminess (or sour cream or mayonnaise)
  • Extra lime wedges for serving
  • fresh coriander leaves to add a burst of freshness

Method

Preparation
  1. In a small bowl, mix together the chili powder, cumin, paprika, sea salt, garlic powder, onion powder, crushed red chili flakes, oregano, and black pepper until well combined.
  2. Rub the spice mixture all over the chuck beef roast, ensuring it is well coated.
Cooking
  1. Place the seasoned beef into the slow cooker, pouring in ¼ cup of water. Cover and cook on high for 6 hours or low for 8–10 hours until the beef is tender.
  2. Once cooked, shred the beef directly in the slow cooker using two forks, mixing it with the cooking liquid.
Preparation of Toppings
  1. In a separate bowl, mash the ripe avocados with the juice of 1 lime. Season with a pinch of garlic powder and a pinch of salt to taste.
  2. Warm the corn tortillas in a frying pan over medium heat for about 1 minute on each side until warm and slightly crispy.
Assembly
  1. To assemble, spoon a generous amount of mashed avocado onto each tortilla, followed by a portion of the shredded beef. Drizzle with dairy-free yogurt, sour cream, or mayonnaise.
  2. Serve with extra lime wedges and garnish with fresh coriander leaves.

Notes

For extra flavor, consider toppings like diced tomatoes or sautéed onions. If a spicier kick is desired, increase the crushed red chili flakes.
