Method
Preparation
- In a small bowl, mix together the chili powder, cumin, paprika, sea salt, garlic powder, onion powder, crushed red chili flakes, oregano, and black pepper until well combined.
- Rub the spice mixture all over the chuck beef roast, ensuring it is well coated.
Cooking
- Place the seasoned beef into the slow cooker, pouring in ¼ cup of water. Cover and cook on high for 6 hours or low for 8–10 hours until the beef is tender.
- Once cooked, shred the beef directly in the slow cooker using two forks, mixing it with the cooking liquid.
Preparation of Toppings
- In a separate bowl, mash the ripe avocados with the juice of 1 lime. Season with a pinch of garlic powder and a pinch of salt to taste.
- Warm the corn tortillas in a frying pan over medium heat for about 1 minute on each side until warm and slightly crispy.
Assembly
- To assemble, spoon a generous amount of mashed avocado onto each tortilla, followed by a portion of the shredded beef. Drizzle with dairy-free yogurt, sour cream, or mayonnaise.
- Serve with extra lime wedges and garnish with fresh coriander leaves.
Notes
For extra flavor, consider toppings like diced tomatoes or sautéed onions. If a spicier kick is desired, increase the crushed red chili flakes.
